Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper. Brush the paper with the olive oil to prevent the buttons from sticking.

  2. 2

In a large bowl, mix the ground turkey, pumpkin puree, ground oats, shredded mozzarella cheese, finely grated carrot, beaten egg, chopped chives, garlic powder and salt until evenly combined.

  3. 3

Let the mixture rest for 5 minutes so the ground oats can absorb some of the moisture from the pumpkin puree and the egg.

  4. 4

With lightly damp hands, shape 16 small balls and gently flatten them to make round buttons about 1.5 inches wide.

  5. 5

Place the buttons on the prepared tray, leaving a little space between each one. If you like, lightly brush the tops with a little of the olive oil from the tray to help them brown.

  6. 6

Bake at 200 °C / 400 °F for 16 to 18 minutes, or until firm, lightly golden on the outside and fully cooked inside.

  7. 7

Remove from the oven and let them rest for 3 minutes before serving so the mozzarella can settle and the buttons hold their shape better.

Chef tips

For a softer texture, grate the carrot on the finest side of the grater. If the mixture feels too wet, add 1 or 2 extra tablespoons of ground oats. They pair well with plain yogurt or a mild tomato sauce.

Substitutions

You can swap the mozzarella for another mild shredded cheese. Chives can be replaced with very finely chopped parsley. If you do not have pumpkin puree, use thick sweet potato puree, keeping in mind the flavor will be slightly sweeter.
