Instructions

1. Preheat the oven to 220 °C / 425 °F. On a baking tray, toss the squash with 1 1/2 tablespoons olive oil, half of the smoked paprika, the cumin, 1/2 teaspoon salt, and a little black pepper. Roast for 25 to 30 minutes, stirring halfway through, until tender and golden.
- 2
2. While the squash roasts, make the sauce: in a bowl, whisk together the tahini, plain yogurt, lemon juice and zest, 2 tablespoons water, a pinch of salt, and pepper. Stir until smooth and pourable. Set aside.
- 3
3. Season the beef strips with the fresh rosemary, the remaining smoked paprika, 1/2 teaspoon salt, and black pepper.
- 4
4. Heat a large skillet over medium-high heat with 1 tablespoon olive oil. Sear the beef for 3 to 5 minutes, stirring, until browned on the outside but still juicy. Transfer to a plate and set aside.
- 5
5. In the same skillet, add the red onion and garlic. Cook over medium heat for 3 minutes in the remaining fat until the onion softens. Add the fresh spinach and cook 1 to 2 minutes more until wilted.
- 6
6. Add the cooked brown rice and vegetable broth or water to the skillet. Stir well for 2 to 3 minutes until the rice is hot and lightly creamy. Taste and adjust with the remaining salt if needed.
- 7
7. Return the beef to the skillet for just 1 minute so it heats through without overcooking.
- 8
8. Divide the creamy spinach rice among 4 bowls. Top with the roasted squash and rosemary beef. Finish with the light tahini lemon sauce and toasted pumpkin seeds over the top.
- 9
9. Serve immediately, with extra black pepper or lemon zest if desired.
Chef tips
For more tender beef, slice it thinly against the grain. If the rice seems dry, add a little more hot broth before serving.
Substitutions
You can swap the beef for chicken strips. Squash can be replaced with sweet potato. If you do not have yogurt, use an unsweetened plant-based alternative, though the allergen profile may change.
