Instructions
- 1
Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or a bell-shaped silicone mold with a little of the olive oil.
- 2
In a large bowl, mix the ground turkey, cooked white rice, finely grated carrot, 50 g of the shredded mozzarella cheese, the beaten egg, breadcrumbs, grated onion, the remaining olive oil, garlic powder, sweet paprika, salt, and ground black pepper.
- 3
Stir well with a spoon or with clean hands until you get an even, slightly sticky mixture.
- 4
Divide the mixture into 12 small portions and press them into the bell-shaped mold, or shape small bells by hand and place them on the tray.
- 5
Sprinkle the remaining 20 g of shredded mozzarella cheese on top for a soft golden finish.
- 6
Bake for 16 to 18 minutes at 200 °C / 400 °F, or until the little bells are cooked through and lightly golden on the outside.
- 7
While they bake, make the sauce by mixing the plain yogurt, cooked carrot puree, and lemon juice in a small bowl until smooth and creamy.
- 8
Let the little bells rest for 3 minutes out of the oven before unmolding or serving. Serve with the yogurt and carrot sauce on the side.
Chef tips
If the mixture feels too wet from the carrot or onion, add 1 extra tablespoon of breadcrumbs. For a fun presentation, use an oven-safe silicone mold with simple shapes.
Substitutions
You can replace the mozzarella with Monterey Jack or a mild shreddable fresh cheese. The cooked white rice can be swapped for well-cooked brown rice, although the texture will be slightly firmer.
