Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Lightly grease a baking tray or mini muffin pan with the olive oil.
- 2
Cook the small pasta in water until al dente. Drain well and let it cool for 5 minutes so it does not cook the egg when mixed.
- 3
In a large bowl, combine the ricotta, shredded mozzarella, beaten egg, grated carrot, chives, garlic powder, salt, pepper, and milk. Mix until evenly combined.
- 4
Add the cooked pasta and fine breadcrumbs. Stir gently so all ingredients are well incorporated. If the mixture looks too wet, add a little more breadcrumbs.
- 5
Spoon the mixture into the mini muffin pan or shape it into small round mounds on the tray. Press lightly to compact and create a little snail-like shape.
- 6
Bake for 16 to 18 minutes at 200 °C / 400 °F, until the edges are lightly golden and the centers feel set.
- 7
Let them rest for 5 minutes before unmolding. Serve warm so they keep their soft, kid-friendly texture.
Chef tips
For a fun presentation, place two very thin chive strips on top of each bite after baking to look like snail antennae. You can also use a silicone mini muffin pan for easier unmolding.
Substitutions
You can swap the mozzarella for mild Oaxaca-style cheese or another gently flavored shredded cheese. Chives can be replaced with very finely chopped parsley. If you do not have breadcrumbs, use finely ground oats in the same amount.
