Instructions
- 1
Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it with a little of the olive oil.
- 2
Place the potatoes in a pot with water and cook them for 12 to 15 minutes, until very tender. Drain well and mash them until smooth while still hot.
- 3
Transfer the drained tuna in water to a large bowl and flake it with a fork. Add the mashed potato, finely grated carrot, chopped chives, garlic powder, salt, beaten egg, 40 g of the shredded mozzarella cheese, and the breadcrumbs.
- 4
Mix very well until you get a soft, shapeable mixture. If it feels too wet, add a little more breadcrumbs.
- 5
Take portions of the mixture and roll them into short strips with your hands. Coil each strip onto itself to create snail shapes. Place them on the prepared tray.
- 6
Brush the snail bites with olive oil and sprinkle the remaining shredded mozzarella cheese on top.
- 7
Bake at 200 °C / 400 °F for 12 to 15 minutes, until the snail bites are golden outside and the cheese is melted.
- 8
Let them rest for 3 minutes before serving so they hold their shape better.
Chef tips
For a firmer texture, chill the mixture for 10 minutes before shaping the snail bites. You can make them small for little hands or slightly larger for sharing.
Substitutions
You can substitute the chives with mild parsley. Mozzarella can be replaced with any mild shredded melting cheese. If you do not have breadcrumbs, use finely ground oats, keeping in mind that allergens may change if using oats with gluten.
