Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and lightly grease a baking sheet with a little of the olive oil.

  2. 2

Boil the potato until very tender, about 10 to 12 minutes. Drain well and mash it in a large bowl until smooth and lump-free.

  3. 3

Add the shredded chicken, sweet corn, mozzarella cheese, beaten egg, breadcrumbs, the remaining olive oil, onion powder, garlic powder, salt, and black pepper to the mashed potato. Mix very well until you have a soft, shapeable mixture. If it feels too wet, add a little more breadcrumbs.

  4. 4

Take portions of the mixture and shape them into thick discs about the size of your palm. Using your fingers, press in two eyes and a smile on each disc to create the faces.

  5. 5

Place the smiles on the prepared baking sheet and bake for 20 to 25 minutes at 200 °C / 400 °F, carefully flipping them halfway through, until golden on the outside.

  6. 6

Let them rest for 3 minutes before serving so they hold their shape better. Serve warm.

Chef tips

For a firmer texture, chill the mixture for 10 minutes before shaping. For a more playful presentation, make bigger smiles so they brown more evenly in the oven.

Substitutions

You can swap the mozzarella for another mild shredded cheese. Sweet corn can be replaced with finely chopped cooked carrot. If you do not have breadcrumbs, use finely ground oats, though the texture will be slightly more rustic.
