Instructions
- 1
Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it.
- 2
In a large bowl, combine the shredded chicken breast, grated carrot, sweet corn, shredded mozzarella, beaten egg, thick plain yogurt, garlic powder, sweet paprika, and salt.
- 3
Add the breadcrumbs and all-purpose flour. Mix well with a spoon or clean hands until you get a moldable mixture. If it feels too wet, add a little more breadcrumbs, 1 tablespoon at a time.
- 4
Divide the mixture into 8 equal portions. Shape each portion into a small rocket or short cylinder with a rounded tip and place them on the tray.
- 5
Brush the rockets with olive oil so they brown evenly.
- 6
Bake for 16 to 18 minutes at 200 °C / 400 °F, until firm, cooked through, and golden on the outside.
- 7
Let them rest for 5 minutes before serving so they hold their shape better and cool to a child-friendly temperature.
Chef tips
For a softer texture, lightly chop the corn before mixing it in. For a more playful presentation, make small 'windows' with the tip of a spoon before baking.
Substitutions
You can swap the mozzarella for another mild shredded cheese. Thick plain yogurt can be replaced with the same amount of thick sour cream or softened cream cheese. Carrot can be replaced with well-drained zucchini, though the texture will change slightly.
