Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a baking tray with some of the olive oil or line it with parchment paper.

  2. 2

    2. In a large bowl, mix the ground chicken, pumpkin puree, ground oats, shredded mozzarella cheese, beaten egg, grated onion, garlic powder, sweet paprika, salt, and black pepper until evenly combined.

  3. 3

    3. Let the mixture rest for 5 minutes so the oats can absorb some moisture and the mixture becomes easier to shape.

  4. 4

    4. With slightly damp hands, shape 12 small oval or round pillows of equal size and place them on the prepared tray.

  5. 5

    5. Brush the tops of the pillows with the remaining olive oil to help them brown evenly.

  6. 6

    6. Bake for 16 to 18 minutes at 200 °C / 400 °F, or until the pillows are golden outside and the chicken is fully cooked inside.

  7. 7

    7. Remove from the oven and let rest for 3 minutes before serving so they can set and be easier for children to handle.

  8. 8

    8. Serve warm. If desired, pair with soft vegetable sticks or a simple kid-friendly dipping sauce.

Chef tips

For an even softer texture, grate the onion very finely and mix all ingredients well without overpacking. If the mixture feels too wet, add 1 or 2 extra tablespoons of ground oats.

Substitutions

You can swap mozzarella for another mild shredded cheese. Pumpkin can be replaced with sweet potato puree, and onion with well-drained grated zucchini.
