Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F. Lightly grease a 12-cup muffin tin with a little olive oil.

  2. 2

Place the couscous in a medium bowl and pour the hot water over it. Cover for 5 minutes to let it absorb, then fluff with a fork.

  3. 3

Meanwhile, heat 1 tablespoon olive oil in a skillet over medium heat. Add the onion and cook for 2 minutes until softened.

  4. 4

Add the ground turkey, salt, garlic powder, and dried oregano. Cook for 5 to 6 minutes, breaking it up with a spoon, until the turkey is fully cooked and no longer pink.

  5. 5

Stir in the grated carrot and the grated, well-squeezed zucchini. Cook for 2 more minutes to remove excess moisture. Remove from the heat and let cool slightly for 3 minutes.

  6. 6

In a large bowl, combine the hydrated couscous, the turkey and vegetable mixture, the beaten egg, and 50 g / 1/2 cup of the shredded mozzarella cheese.

  7. 7

Divide the mixture among the 12 muffin cups, pressing gently so the cups hold together. Sprinkle the remaining 20 g / 1/4 cup shredded mozzarella cheese on top.

  8. 8

Bake for 14 to 16 minutes at 200 °C / 400 °F, until the cups are set and lightly golden on top.

  9. 9

Let rest for 5 minutes before unmolding. Serve warm.

Chef tips

For a firmer texture, let the cups cool for 10 minutes before removing them from the pan. Silicone muffin molds also help them release more easily.

Substitutions

You can swap the mozzarella for Monterey Jack or another mild melting cheese. Zucchini can be replaced with very finely chopped steamed broccoli. If you do not have couscous, use fine bulgur and adjust the soaking liquid according to the package directions.
