Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Pat the sea bass fillets dry with paper towels and season them with 4 g salt, black pepper, and 1 tablespoon of lime juice.

  2. 2

Place the pumpkin seeds, lime zest, 2 minced garlic cloves, half of the cilantro, and 1 tablespoon olive oil in a processor. Pulse until you get a coarse, moist crumb, not a paste.

  3. 3

Heat an oven-safe skillet over medium-high heat with 1 tablespoon olive oil. Sear the sea bass for 1 minute per side, just until lightly colored. Remove the skillet from the heat.

  4. 4

Press the pepita mixture onto the top of each fillet. Transfer the skillet to the oven and bake for 8 to 10 minutes at 220 °C / 425 °F, until the fish is cooked through and the crust is golden.

  5. 5

While the fish bakes, place the poblano pepper directly over a flame or under the oven broiler until the skin is charred. If using the broiler, roast at 245 °C / 475 °F for 8 to 10 minutes, turning once. Peel off the charred skin and cut the poblano into strips.

  6. 6

In a medium saucepan, sauté the white onion with 1 tablespoon olive oil over medium heat for 3 minutes. Add 200 g of the corn, the poblano, the cumin, and a pinch of salt. Cook 2 minutes more.

  7. 7

Add the vegetable broth and coconut cream to the saucepan. Simmer over medium heat for 5 minutes. Blend until smooth and return to the saucepan. Stir in the remaining 100 g corn and cook 2 minutes more. Adjust with the remaining lime juice and salt to taste.

  8. 8

In another skillet, heat the last tablespoon of olive oil over medium-high heat. Add the red onion and the remaining garlic clove; cook for 2 minutes. Add the nopales and oregano, season with a pinch of salt, and sauté for 4 minutes until hot and lightly browned.

  9. 9

To serve, spoon the warm poblano corn cream onto each plate. Top with the sautéed nopales and set a crusted sea bass fillet on top. Finish with the remaining fresh cilantro and serve immediately.

Chef tips

Lightly toast the pumpkin seeds before processing for deeper flavor. For a more even crust, press it onto the fish while it is still warm from searing.

Substitutions

You can use snapper, grouper, or fresh cod instead of sea bass. Nopales can be replaced with sautéed zucchini, though the flavor profile will change. If you do not have coconut cream, use another unsweetened plant-based cream.
