Instructions

1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking sheet or line it with parchment paper.
- 2
2. Place the cooked, drained chickpeas in a large bowl and mash them with a fork or potato masher until you get a coarse paste with a few small bits left.
- 3
3. Add the finely grated carrot, shredded mozzarella cheese, beaten egg, oat flour, olive oil, garlic powder, sweet paprika, and salt. Mix very well until a moist but shapeable mixture forms.
- 4
4. If the mixture feels too soft, let it rest for 5 minutes so the oat flour can absorb some moisture.
- 5
5. Take portions of the mixture and shape 12 even finger-like sticks. Place them on the baking sheet with a little space between each one.
- 6
6. Bake for 18 to 20 minutes at 200 °C / 400 °F, turning them carefully halfway through, until firm and lightly golden on the outside.
- 7
7. Remove from the oven and let them cool for 5 minutes before serving so the cheese can set and the fingers hold their shape better.
Chef tips
For a more even texture, dry the chickpeas and carrot well before mixing. For a fun variation, shape them into shorter mini sticks.
Substitutions
You can swap the mozzarella for Monterey Jack or another mild melting cheese. Oat flour can be replaced with fine breadcrumbs, though the texture will change and it would add gluten unless using gluten-free crumbs.
