Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper.

  2. 2

    2. Place the sweet potato and water in a pot. Cook over medium heat for 10 to 12 minutes, until the sweet potato is very tender. Drain well.

  3. 3

    3. Transfer the cooked sweet potato to a large bowl and mash until smooth.

  4. 4

    4. Add the shredded chicken, shredded mozzarella cheese, ground oats, egg, olive oil, garlic powder, sweet paprika, and salt to the bowl. Mix very well until you have a moist but shapeable mixture.

  5. 5

    5. Take small portions of the mixture and shape them into long fingers or small bars with rounded ends, sized for kids. Place them on the prepared tray.

  6. 6

    6. Bake for 12 minutes at 200 °C / 400 °F. Remove the tray, carefully turn each finger, and bake for 8 to 10 minutes more, until firm and lightly golden.

  7. 7

    7. Let them rest for 5 minutes before serving so they can set and cool slightly. Serve warm.

Chef tips

If the mixture feels too soft, add 1 or 2 extra tablespoons of ground oats. For a softer texture, shred the chicken very finely.

Substitutions

You can swap the mozzarella for Monterey Jack or another mild melting cheese. The sweet potato can be replaced with well-drained roasted pumpkin, though the flavor will be milder.
