Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Lightly grease a baking tray or line it with parchment paper and brush with half of the olive oil.

  2. 2

    2. In a large bowl, mix the ground turkey, ground oats, grated carrot, mozzarella cheese, beaten egg, plain yogurt, the remaining olive oil, onion powder, garlic powder, salt, and black pepper until evenly combined.

  3. 3

    3. Let the mixture rest for 5 minutes so the oats absorb some moisture and the mixture becomes easier to shape.

  4. 4

    4. Place the breadcrumbs on a plate. With slightly damp hands, take portions of the mixture and shape 12 small compact finger-like strips, sized for children to hold easily.

  5. 5

    5. Gently roll each finger in the breadcrumbs for a light outer coating. Arrange them on the tray with a little space between each one.

  6. 6

    6. Bake for 16 to 18 minutes at 220 °C / 425 °F, turning them carefully halfway through, until golden and the turkey is fully cooked inside.

  7. 7

    7. Remove the tray from the oven and let the fingers rest for 3 minutes before serving so they settle and stay juicy.

  8. 8

    8. Serve warm on their own or with a simple side such as cucumber sticks or mild mashed potatoes.

Chef tips

If the mixture feels too wet, add 1 or 2 extra tablespoons of ground oats. For a deeper golden finish, you can broil for 1 to 2 minutes at the end, watching closely.

Substitutions

You can replace mozzarella with Monterey Jack or another mild shredded cheese. Carrot can be swapped for well-drained zucchini. If you do not have ground oats, blend rolled oats into a coarse flour.
