Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment brushed with a little olive oil.

  2. 2

    2. Cook the potato in boiling water for 10 to 12 minutes, until very soft. Drain well and mash in a large bowl until you have a thick puree.

  3. 3

    3. While the potato cooks, heat the olive oil in a skillet over medium heat. Add the ground turkey and cook for 6 to 8 minutes, breaking it up with a spoon, until no longer pink.

  4. 4

    4. Stir the grated carrot, chives, garlic powder, and salt into the turkey. Cook 2 more minutes, stirring, to soften the carrot and blend the flavors. Remove from the heat.

  5. 5

    5. Add the cooked turkey and carrot mixture, shredded mozzarella, beaten egg, and ground oats to the mashed potato bowl. Mix very well until a soft, moist, shapeable dough forms.

  6. 6

    6. Take portions of the mixture and roll them into short ropes with your hands. Coil each rope into a small spiral and place on the tray, leaving a little space between them. If the mixture sticks, lightly moisten your hands.

  7. 7

    7. Bake the spirals at 200 °C / 400 °F for 18 to 20 minutes, carefully turning them halfway through, until firm and lightly golden around the edges.

  8. 8

    8. Let them rest for 5 minutes before serving so the cheese can set and the spirals hold their shape better.

Chef tips

For a more even shape, chill the mixture for 10 minutes before rolling. Make smaller spirals for little hands or slightly larger ones for lunchboxes.

Substitutions

You can swap the mozzarella for mild Oaxaca cheese or Monterey Jack. Chives can be replaced with finely chopped parsley. If you do not have ground oats, use fine breadcrumbs in the same amount, noting that this would add gluten.
