Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it with a few drops of the olive oil.

  2. 2

    2. In a bowl, mix the cooked shredded turkey, grated apple, grated carrot, shredded mozzarella cheese, cream cheese, garlic powder, and dried oregano until the filling is evenly combined.

  3. 3

    3. Place the small wheat tortillas on a clean surface. Divide the filling among the tortillas, leaving a 1 cm / 1/2 inch border around the edges.

  4. 4

    4. Lightly brush the edges of each tortilla with some of the beaten egg. Roll each tortilla up gently but firmly to create tight cylinders.

  5. 5

    5. Cut each roll into 4 equal spirals and place them cut-side up on the prepared tray. Brush the tops with the remaining beaten egg and the olive oil.

  6. 6

    6. Bake for 18 to 20 minutes at 200 °C / 400 °F, until the spirals are golden, the cheese is melted, and the tortilla edges are lightly crisp.

  7. 7

    7. Let them rest for 5 minutes before serving so the cheese can set slightly and the spirals are easier to hold and eat.

Chef tips

If you want a softer texture for younger children, bake the spirals for exactly 18 minutes and cover them with a clean towel for 2 minutes after baking.

Substitutions

You can swap the mozzarella for a mild shredded cheese such as Monterey Jack. The apple can be replaced with grated firm pear. If you do not have cooked turkey, use the same amount of shredded cooked chicken instead.
