Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or a star-shaped silicone mold with a little olive oil.

  2. 2

Steam the broccoli for 3 to 4 minutes until tender but still bright green. Let it cool slightly and chop it even more finely so it blends well.

  3. 3

If using frozen corn, thaw it and pat it dry with a paper towel. In a bowl, combine the chopped broccoli, sweet corn, ricotta cheese, shredded mozzarella, beaten egg, breadcrumbs, oat flour, chives, garlic powder, salt, black pepper, and olive oil.

  4. 4

Mix very well until you have a thick, shapeable mixture. Let it rest for 5 minutes so the breadcrumbs and oat flour can absorb some of the moisture.

  5. 5

Spoon the mixture into the star mold and press gently, or shape small portions with your hands and flatten them slightly on the tray to make them kid-friendly and easy to eat.

  6. 6

Bake for 16 to 18 minutes at 200 °C / 400 °F, until the stars are set and lightly golden around the edges.

  7. 7

Let them rest for 5 minutes before unmolding or serving so they hold their shape better. Serve warm.

Chef tips

For a softer texture, chop the broccoli almost into crumbs. If the mixture feels too wet, add 1 extra tablespoon of breadcrumbs. If it feels too firm, add 1 tablespoon of ricotta.

Substitutions

You can swap the chives for mild parsley. Mozzarella can be replaced with another mild shredded cheese. Corn can be replaced with very finely chopped cooked carrot.
