1. Preheat the oven to 220 °C / 425 °F. Line a baking sheet with parchment paper and lightly brush it with some of the olive oil.

2. In a large bowl, mix the ground chicken, sweet corn, cheddar cheese, half of the breadcrumbs, the beaten egg, plain yogurt, onion powder, sweet paprika, salt, and black pepper until evenly combined.
- 3
3. Place the remaining breadcrumbs on a flat plate. With slightly damp hands, take portions of the mixture and shape pieces about 2 cm / 3/4 inch thick. For a fun kid-friendly look, gently press with a small star cutter; you can also make simple patties if preferred.

4. Coat each piece lightly on both sides with the breadcrumbs on the plate and arrange them on the prepared baking sheet.
- 5
5. Brush or drizzle the pieces with the remaining olive oil. Bake for 10 minutes at 220 °C / 425 °F.

6. Remove the tray, carefully flip the stars, and bake for 8 to 10 minutes more at 220 °C / 425 °F, until golden and the chicken is fully cooked in the center.

7. Let them rest for 2 minutes before serving. Serve the crunchy stars with tomato sauce for dipping.
Chef tips
For a firmer texture, chill the mixture for 10 minutes before shaping. If using a star cutter, press firmly and remove the excess mixture so the shape stays well defined.
Substitutions
You can replace the cheddar with shredded mozzarella. Plain yogurt can be swapped for the same amount of sour cream. If you do not have corn, use very finely chopped cooked carrot instead.
