Instructions

  1. 1

    1. Preheat the oven to 190 °C / 375 °F and lightly grease a mini muffin pan or baking tray with the olive oil.

  2. 2

    2. In a medium bowl, mash the ripe banana until smooth. Add the beaten egg and plain yogurt, then mix well.

  3. 3

    3. Stir in the quick oats, finely grated carrot, shredded mozzarella cheese, ground cinnamon, and baking powder. Mix until a thick, even batter forms.

  4. 4

    4. Spoon the mixture into the mini muffin pan, filling each cup almost to the top. If using small star cutters on a baking tray, place compact portions and shape them with lightly damp hands.

  5. 5

    5. Bake for 16 to 18 minutes at 190 °C / 375 °F, until the stars are set, slightly puffed, and just lightly golden around the edges.

  6. 6

    6. Remove from the oven and let rest for 5 minutes so the cheese and oats can finish setting. Unmold carefully.

  7. 7

    7. Serve warm or at room temperature. If desired, pair with fresh fruit on the side.

Chef tips

For a more even texture, you can pulse the oats before mixing. If the batter feels too wet because of the banana size, add 1 or 2 extra tablespoons of oats.

Substitutions

You can swap the mozzarella for Monterey Jack or mild Oaxaca-style cheese. The carrot can be replaced with grated zucchini, well squeezed. Plain yogurt can be replaced with the same amount of mild sour cream.
