Instructions
- 1
Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper brushed with a little olive oil.
- 2
Place the cooked, drained chickpeas in a bowl and mash them with a fork or potato masher until you get a paste with some texture.
- 3
Add the grated carrot, shredded mozzarella cheese, beaten egg, breadcrumbs, olive oil, garlic powder, onion powder, and salt. Mix well until a moldable dough forms.
- 4
Let the mixture rest for 5 minutes so the breadcrumbs can absorb some of the moisture.
- 5
Roll the mixture between two sheets of parchment paper until it is about 1.5 cm thick.
- 6
Cut the dough with a small star-shaped cutter. Gather the scraps, roll them again, and cut more stars until all the mixture is used.
- 7
Place the stars on the prepared tray and bake for 16 to 18 minutes at 200 °C / 400 °F, carefully flipping them halfway through, until firm and lightly golden.
- 8
Let them cool for 5 minutes before serving so the cheese can set and the little stars hold their shape better.
Chef tips
If the mixture feels too wet, add 1 or 2 extra tablespoons of breadcrumbs. If it feels too dry, add 1 tablespoon of water or a little more beaten egg. For younger children, serve the stars warm and soft.
Substitutions
You can swap mozzarella for a mild shredded cheese such as Monterey Jack or a mild semi-hard cheese. The breadcrumbs can be replaced with gluten-free breadcrumbs for a gluten-free version, as long as the other ingredients are also suitable.
