Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment lightly brushed with olive oil.

  2. 2

    2. In a large bowl, mix the cooked shredded chicken, grated carrot, ricotta cheese, ground oats, beaten egg, grated Parmesan cheese, chopped chives, garlic powder, salt, and olive oil until you have a moist, moldable mixture.

  3. 3

    3. Let the mixture rest for 5 minutes so the ground oats can absorb some of the moisture from the ricotta and egg.

  4. 4

    4. With slightly damp hands, take small portions of the mixture, press and flatten them to about 1.5 cm thick. Cut with a small star cutter or shape little stars by hand.

  5. 5

    5. Place the stars on the tray, leaving a little space between each one. If you have scraps, gather them again and shape more pieces.

  6. 6

    6. Bake for 16 to 18 minutes at 200 °C / 400 °F, until the stars are set, lightly golden on the bottom, and heated through in the center.

  7. 7

    7. Remove from the oven and let them cool for 5 minutes before serving so they firm up slightly and are easier to handle.

  8. 8

    8. Serve warm. If desired, pair with cucumber sticks or soft tomato pieces for older children.

Chef tips

For a softer texture, pulse the chicken for a few seconds before mixing. If the mixture feels too wet, add 1 to 2 extra tablespoons of ground oats. If it feels too dry, add 1 tablespoon of ricotta.

Substitutions

You can swap the chives for very finely chopped parsley. The Parmesan can be omitted and replaced with a little more ricotta. Ground oats can be replaced with fine breadcrumbs, although this will change the allergens and texture.
