Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and brush a baking tray with half of the olive oil.

  2. 2

Boil the potato in water for 10 to 12 minutes, until very tender. Drain well and mash into a thick puree in a large bowl.

  3. 3

Cook the white fish by steaming or in a nonstick skillet for 5 to 6 minutes, until fully cooked and easy to flake. Let it cool slightly and flake it with a fork.

  4. 4

Add the flaked fish to the bowl with the potato, along with the shredded mozzarella cheese, beaten egg, 30 g breadcrumbs, all-purpose flour, grated carrot, chives, salt, and black pepper. Mix until you get a uniform, shapeable mixture.

  5. 5

If the mixture feels too soft, let it rest for 5 minutes so the breadcrumbs and flour can absorb some moisture.

  6. 6

Sprinkle a clean surface with some of the remaining breadcrumbs. Press the mixture out with your hands or a spatula to about 2 cm thick and cut into star shapes. Gently coat each star with the rest of the breadcrumbs.

  7. 7

Place the stars on the prepared tray, brush the tops with the remaining olive oil, and bake for 16 to 18 minutes at 200 °C / 400 °F, turning carefully halfway through, until lightly golden on the outside.

  8. 8

Let them cool for 3 minutes before serving so they hold their shape and stay tender inside.

Chef tips

For a firmer texture, chill the mixture for 10 minutes before cutting the stars. If you do not have a cutter, shape small stars by hand or make mini patties instead.

Substitutions

You can replace the mozzarella with a mild melting cheese such as Monterey Jack. The carrot can be swapped for very well-drained zucchini. The chives can be omitted.
