Instructions

  1. 1

    1. Preheat the oven to 200°C / 400°F and lightly grease a baking tray with 1 teaspoon of the olive oil.

  2. 2

    2. Cook the potato in water until very soft, about 12 to 15 minutes. Drain well and mash it with the milk and salt until smooth.

  3. 3

    3. Add the beaten egg, ground oats, half of the shredded mozzarella cheese, and the chopped chives to the mashed potato. Mix until you have a soft but shapeable dough.

  4. 4

    4. In a separate bowl, combine the cooked shredded turkey with the peas and the remaining shredded mozzarella cheese.

  5. 5

    5. Divide the potato mixture into 8 portions and shape small boats or ovals, gently pressing the center down with a spoon or damp fingers.

  6. 6

    6. Place the boats on the tray and fill the center of each one with the turkey, peas, and cheese mixture.

  7. 7

    7. Brush the edges with the remaining teaspoon of olive oil to help them brown.

  8. 8

    8. Bake for 22 to 25 minutes at 200°C / 400°F, until the boats are set and lightly golden around the edges.

  9. 9

    9. Let them rest for 5 minutes before serving so they hold their shape better.

Chef tips

If the potato mixture feels too soft, add 1 extra tablespoon of ground oats. For a playful look, shape little windows with a spoon so they resemble tiny boats.

Substitutions

You can use cooked chicken instead of turkey. Chives can be replaced with finely chopped parsley. If you do not have mozzarella, use another mild melting cheese.
