1. Rinse the millet under cold water. Place it in a small saucepan with 240 ml (1 cup) water and cook over medium heat until it comes to a boil. Reduce the heat, cover, and cook for 12 minutes, or until the liquid is absorbed and the millet is tender. Let it cool for 10 minutes.

2. Preheat the oven to 190 °C / 375 °F. Lightly grease a baking sheet or large pan with 5 ml (1 tsp) olive oil.

3. In a bowl, mix the cooked warm millet with the grated pear, plain yogurt, shredded mozzarella, beaten egg, and ground cinnamon.

4. Add the oat flour gradually and mix until you get a soft, moist mixture that can be shaped with a spoon. If the pear released a lot of juice, use the full amount of flour listed.

5. Using a spoon, scoop small portions onto the tray. Shape them into little crescent moons or compact round mounds with lightly damp hands.

6. Bake for 16 to 18 minutes at 190 °C / 375 °F, until the little moons are set and golden around the edges.

7. Remove from the oven and let rest for 5 minutes before serving. Serve warm or at room temperature.
Chef tips
For a softer texture, grate the pear on the fine side of a grater. If you want more even pieces, use a measuring spoon to portion them.
Substitutions
You can swap the mozzarella for mild fresh cheese, finely grated. Plain yogurt can be replaced with plain Greek yogurt, adjusting with 1 to 2 teaspoons of water if the mixture feels too thick. The pear can be replaced with grated apple.
