Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a baking tray with half of the olive oil.

  2. 2

    2. Place the ground turkey, grated zucchini, quick oats, grated mild cheddar cheese, beaten egg, onion powder, garlic powder, sweet paprika, and salt in a large bowl.

  3. 3

    3. Mix everything very well with a spoon or clean hands until evenly combined. Let it rest for 5 minutes so the oats can absorb some of the zucchini moisture.

  4. 4

    4. Take portions of the mixture and shape 12 small crescent moons. Place them on the prepared tray.

  5. 5

    5. Brush the moons with the remaining olive oil to help them brown gently in the oven.

  6. 6

    6. Bake for 16 to 18 minutes at 200 °C / 400 °F, or until the moons are golden outside and the turkey is fully cooked inside.

  7. 7

    7. Remove from the oven and let them rest for 3 minutes before serving so they hold their shape better and cool slightly for kids.

Chef tips

For a softer texture, grate the zucchini on the fine side of the grater. If the mixture feels too wet, add 1 or 2 extra tablespoons of oats. You can use a curved cutter or simply shape the moons by hand.

Substitutions

You can swap the cheddar for mild mozzarella. Ground turkey can be replaced with ground chicken. For a gentler flavor, reduce the sweet paprika to a pinch.
