Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper. Brush the paper with half of the olive oil.

  2. 2

    2. Cook the sweet potato in boiling water for 10 to 12 minutes, until very tender. Drain well and mash it in a large bowl.

  3. 3

    3. Add the sweet corn, 60 g of mozzarella cheese, the beaten egg, breadcrumbs, chives, salt, and black pepper to the sweet potato mash. Mix until a soft, shapeable dough forms.

  4. 4

    4. If the mixture feels too wet, add a little more breadcrumbs. Let it rest for 3 minutes so the crumbs absorb some moisture.

  5. 5

    5. Take portions of the mixture and shape 8 small moon or half-moon pieces. Place them on the prepared tray.

  6. 6

    6. Brush the tops of the moons with the remaining olive oil and sprinkle the remaining 20 g of mozzarella cheese on top.

  7. 7

    7. Bake at 200 °C / 400 °F for 16 to 18 minutes, or until the pieces are set and lightly golden around the edges.

  8. 8

    8. Let them rest for 5 minutes before serving so they firm up and are easier to hold by hand.

Chef tips

For a more defined shape, lightly dampen your hands before shaping. You can also use a half-moon cutter on a thick layer of the chilled mixture.

Substitutions

You can swap mozzarella for Oaxaca cheese or another mild melting cheese. Chives can be replaced with finely chopped parsley. If you do not have breadcrumbs, use finely ground oats, though the texture will be slightly more rustic.
