Instructions
- 1
1. Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it with some of the olive oil.
- 2
2. In a medium bowl, combine the cooked white rice, finely grated carrot, shredded mozzarella cheese, lightly beaten egg, breadcrumbs, garlic powder, salt, and chopped parsley.
- 3
3. Mix very well until you get a shapeable mixture. If it feels too wet, add a little more breadcrumbs, 1 tablespoon at a time.
- 4
4. Take small portions of the mixture and shape them into compact little moons or half-moons with your hands. Place them on the tray with a little space between each one.
- 5
5. Brush the top of each little moon with the olive oil to help them brown evenly.
- 6
6. Bake for 18 to 20 minutes at 200 °C / 400 °F, carefully turning them halfway through, until golden on the outside and hot in the center.
- 7
7. Let them rest for 5 minutes before serving so they firm up a bit. Serve warm.
Chef tips
For a firmer texture, chill the mixture for 10 minutes before shaping. You can use half-moon molds if you want a more even shape.
Substitutions
You can replace mozzarella with Oaxaca cheese or another mild melting cheese. Parsley can be swapped for very finely chopped chives. If preferred, use cooked brown rice, keeping in mind the texture will be slightly heartier.
