Instructions
- 1
1. Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it with some of the olive oil.
- 2
2. In a large bowl, combine the cooked white rice, finely grated carrot, shredded mozzarella cheese, egg, breadcrumbs, chopped chives, salt, and ground black pepper.
- 3
3. Mix well with a spoon or clean hands until you get a mixture that can be compacted. If it feels too wet, add a little more breadcrumbs.
- 4
4. Take portions of the mixture and shape them into small moons or curved patties with your hands. Place them on the tray, leaving a little space between each one.
- 5
5. Brush the moon patties with the olive oil on both sides to help them brown evenly.
- 6
6. Bake for 12 minutes at 200 °C / 400 °F. Remove the tray, carefully flip them, and bake 13 more minutes at the same temperature until golden on the outside.
- 7
7. Let them rest for 3 to 5 minutes before serving so they set better and are easier for kids to handle.
Chef tips
For a softer texture, mash the rice slightly with a fork before mixing. If you want a more even shape, chill the mixture for 10 minutes before shaping the moons.
Substitutions
You can use shredded Monterey Jack or a similar mild cheese instead of mozzarella. Chives can be replaced with very finely chopped parsley. For a gluten-free version, use gluten-free breadcrumbs.
