Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper brushed with a little olive oil.

  2. 2

    2. In a large bowl, combine the cooked white rice, ground turkey, finely grated carrot, egg, shredded mozzarella cheese, and ground oats.

  3. 3

    3. Add the olive oil, onion powder, garlic powder, and salt. Mix very well with a spoon or clean hands until you get a uniform, slightly sticky mixture.

  4. 4

    4. Divide the mixture into 8 portions and shape small moon-like patties or curved medallions, pressing them firmly so they hold together during baking.

  5. 5

    5. Place the little moons on the tray, leaving a bit of space between them. If you like, brush the tops with a few extra drops of olive oil for better browning.

  6. 6

    6. Bake for 18 to 20 minutes at 200 °C / 400 °F, carefully turning halfway through, until the turkey is fully cooked and the patties are golden on the outside.

  7. 7

    7. Remove from the oven and let rest for 5 minutes before serving so they set nicely. Serve warm.

Chef tips

If the mixture feels too wet, add 1 extra tablespoon of ground oats. For a softer texture for younger children, grate the carrot very finely and lightly mash the rice before mixing.

Substitutions

You can swap mozzarella for a mild melting cheese or a soft shreddable fresh cheese. Cooked white rice can be replaced with well-cooked brown rice, though the texture will be slightly firmer.
