Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F and line a baking sheet with parchment paper. Lightly brush the paper with a little of the olive oil.

  2. 2

In a large bowl, mix the ground turkey, grated carrot, shredded mozzarella, egg, breadcrumbs, 30 ml (2 tbsp) of the plain yogurt, onion powder, sweet paprika, salt, and black pepper until well combined.

  3. 3

With slightly damp hands, take small portions of the mixture and shape them into mini half-moon patties about 2 to 2.5 inches wide. Place them on the prepared baking sheet.

  4. 4

Brush the moon patties with the remaining olive oil and bake for 12 minutes at 220 °C / 425 °F. Carefully flip them and bake 3 minutes more, until cooked through and lightly golden at the edges.

  5. 5

While they bake, make a mild sauce by mixing the crushed tomato, the remaining 30 ml (2 tbsp) plain yogurt, and the honey in a small saucepan. Warm over low heat for 3 to 4 minutes, stirring until smooth. Do not let it boil hard.

  6. 6

Serve the moon patties warm with the mild sauce spooned on top or on the side for dipping. Finish with chopped parsley if desired.

Chef tips

If the mixture feels too wet because of the carrot, add 1 or 2 extra tablespoons of breadcrumbs. For neater shapes, chill the mixture for 10 minutes before forming the moons.

Substitutions

You can swap the mozzarella for mild Oaxaca-style cheese or Monterey Jack. The honey can be replaced with the same amount of unsweetened applesauce for a fruitier flavor.
