Instructions
- 1
Preheat the oven to 425°F / 220°C. Toss the cooked chickpeas with 1 tbsp olive oil, 1/2 tsp ground cumin, the smoked paprika, 1/4 tsp salt, and a pinch of black pepper. Spread on a baking sheet and roast for 22 to 25 minutes at 425°F / 220°C, stirring halfway through, until golden and crisp.
- 2
While the chickpeas roast, heat 1 tbsp olive oil in a saucepan over medium heat. Add the shallot and 2 minced garlic cloves; cook for 2 to 3 minutes until softened but not browned.
- 3
Add the rinsed millet to the saucepan and toast for 1 minute, stirring. Pour in 600 ml (2 1/2 cups) of the vegetable broth, the saffron threads, 1/2 tsp salt, and a little black pepper. Bring to a boil, lower the heat, partially cover, and cook for 18 to 20 minutes, stirring once or twice, until the millet is tender.
- 4
Stir the coconut milk, nutritional yeast, lemon zest, and 2 tbsp lemon juice into the millet. Cook over low heat for 3 to 4 more minutes, stirring, until creamy. If needed, gradually add the remaining 150 ml (1/2 cup) vegetable broth to loosen the texture. Adjust with salt and black pepper.
- 5
Heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add the mushrooms and let them brown undisturbed for 2 minutes. Add the grated garlic clove, the remaining 1/2 tsp ground cumin, a pinch of salt, and black pepper; cook 4 to 5 minutes more until the mushrooms are deeply golden.
- 6
Add the balsamic vinegar and maple syrup to the mushrooms. Cook for 1 to 2 minutes, stirring, until the liquid reduces and lightly glazes the mushrooms.
- 7
Spoon the creamy millet into shallow bowls. Top with the glazed mushrooms and crispy chickpeas. Finish with the chopped fresh parsley and a little extra lemon zest if desired.
- 8
Serve immediately while hot to keep the contrast between the creamy millet, juicy mushrooms, and crispy chickpeas.
Chef tips
Dry the chickpeas very well before roasting for a crispier result. If you want an even silkier texture, stir the millet vigorously at the end of cooking to release more starch.
Substitutions
You can replace the millet with creamy polenta or short-grain rice, adjusting the liquid and cooking time. Mixed mushrooms can be replaced with standard button mushrooms. Parsley can be swapped for chives or cilantro.
