Instructions
- 1
Preheat the oven to 425°F / 220°C. On a large baking tray, toss the carrots with 1 tablespoon olive oil, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. On another section of the tray, or on a second tray, toss the cooked chickpeas with 1 tablespoon olive oil, 1 teaspoon smoked paprika, 1/2 teaspoon ground cumin, 1/4 teaspoon salt, and a pinch of black pepper.
- 2
Roast the carrots and chickpeas for 30 to 35 minutes at 425°F / 220°C, stirring the chickpeas halfway through. Remove the chickpeas when golden and crisp; if needed, leave the carrots in a little longer until tender and caramelized at the edges.
- 3
Meanwhile, warm 2 tablespoons of the vegetable broth and add the saffron threads. Let them steep for 5 minutes.
- 4
In a medium saucepan, heat the remaining 1 tablespoon olive oil over medium heat. Add the yellow onion and cook for 4 to 5 minutes until softened. Add the chopped garlic and cook 30 seconds more.
- 5
Stir the rinsed millet into the saucepan and toast for 1 minute, stirring. Add the saffron with its broth, the remaining vegetable broth, 1/2 teaspoon salt, and a little black pepper. Bring to a boil, reduce the heat, cover, and cook for 18 to 20 minutes until the millet is tender.
- 6
While the millet cooks, make the cream: in a blender combine the soaked and drained sunflower seeds, tahini, fresh parsley, 2 garlic cloves, lemon zest, 3 tablespoons lemon juice, 60 ml water, and 1/4 teaspoon salt. Blend until smooth. If needed, add 1 to 2 more tablespoons water for a soft, spoonable texture.
- 7
When the millet is done, turn off the heat and let it rest, covered, for 5 minutes. Uncover and stir vigorously with a spoon to create a creamy texture.
- 8
Serve the creamy millet in shallow bowls and top with the roasted carrots and crispy chickpeas. Finish with spoonfuls of parsley lemon cream and a little more black pepper to taste.
Chef tips
Dry the chickpeas very well before roasting so they turn crispier. For a more elegant presentation, arrange the carrots neatly over the millet and spoon the cream in small ribbons on top.
Substitutions
You can swap the millet for quinoa if you want a less creamy texture. The sunflower seeds can be replaced with soaked cashews if you do not need to avoid tree nuts. Parsley can be replaced with cilantro for a fresher profile.
