Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a baking sheet or a mini muffin pan with the olive oil.

  2. 2

    2. Place the oats in a large bowl. Add the ricotta, grated apple, beaten egg, shredded mozzarella, and ground cinnamon.

  3. 3

    3. Mix very well until you get a thick, even batter. If the mixture feels too dry or dense, add the water and mix again.

  4. 4

    4. Scoop 12 small portions onto the tray, shaping them into rounded little pillows. If using a mini muffin pan, divide the mixture evenly.

  5. 5

    5. Bake for 18 to 20 minutes at 200 °C / 400 °F, or until the mini pillows are set and lightly golden on top.

  6. 6

    6. Remove from the oven and let them rest for 5 minutes so they can firm up. Serve warm or at room temperature.

Chef tips

Grate the apple on the fine side for a softer texture. For more even shapes, lightly wet the spoon before scooping.

Substitutions

You can use well-drained cottage cheese instead of ricotta. Mozzarella can be replaced with another mild shredded cheese. For a cinnamon-free version, simply leave it out.
