Instructions

  1. 1

Preheat the oven to 190 °C / 375 °F and lightly grease a 12-cup mini muffin pan with a little olive oil.

  2. 2

In a large bowl, combine the cooked quinoa, grated apple, finely grated carrot, shredded mozzarella cheese, and ground oats.

  3. 3

Add the beaten egg, plain yogurt, olive oil, ground cinnamon, and salt. Mix well until the mixture is moist and evenly combined.

  4. 4

Divide the mixture among the 12 muffin cups, pressing gently with a spoon to shape them into little cups or helmets.

  5. 5

Bake at 190 °C / 375 °F for 18 to 20 minutes, until the edges are lightly golden and the centers feel set.

  6. 6

Let them rest in the pan for 5 minutes so they hold their shape.

  7. 7

Carefully unmold and serve warm or at room temperature.

Chef tips

If the apple releases a lot of juice, squeeze it lightly before mixing so the batter does not become too wet. You can also use silicone molds for easier unmolding.

Substitutions

You can substitute mozzarella with mild Oaxaca-style cheese or another mild shredded cheese. Red apple can be replaced with grated firm pear. Plain yogurt can be swapped for the same amount of mild sour cream or plain Greek yogurt.
