Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it with a little of the olive oil.

  2. 2

Boil the sweet potato in water for 10 to 12 minutes, until very tender. Drain well and mash with a fork into a thick purée. Let it cool slightly for 5 minutes.

  3. 3

In a large bowl, combine the sweet potato purée, ground turkey, shredded mozzarella, ground oats, egg, grated carrot, garlic powder, onion powder, salt, and black pepper.

  4. 4

Mix with a spoon or clean hands until you have a uniform, shapeable mixture. If the mixture feels too wet, let it rest for 2 minutes so the oats can absorb some moisture.

  5. 5

Take small portions of the mixture and shape them into kite or elongated diamond shapes about 2 to 2.5 inches long. Place them on the tray with a little space between each piece.

  6. 6

Brush the tops of the mini kites with the olive oil to help them brown evenly.

  7. 7

Bake at 200 °C / 400 °F for 20 to 25 minutes, turning carefully halfway through, until firm, golden, and the turkey is fully cooked.

  8. 8

Remove from the oven and let them rest for 3 minutes before serving so they set and are easier for kids to handle.

Chef tips

For a more defined shape, chill the mixture for 10 minutes before shaping. You can also make them smaller for a one-bite snack.

Substitutions

You can replace mozzarella with a mild semi-hard shredded cheese. The carrot can be swapped for grated zucchini, well squeezed. If you do not have ground oats, blend rolled oats into a fine texture.
