Instructions
- 1
Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it with some of the olive oil.
- 2
Place the potato in a pot with water and cook for 10 to 12 minutes, until very tender. Drain well and mash until you have a thick, smooth mash.
- 3
In a large bowl, mix the mashed potato, shredded chicken, sweet corn, mozzarella cheese, beaten egg, breadcrumbs, chives, garlic powder, salt, and black pepper. Stir until a moist mixture forms that can hold its shape.
- 4
If the mixture feels too soft, add 1 to 2 extra tablespoons of breadcrumbs until firmer. Shape into 12 little lanterns or oval nuggets with your hands.
- 5
Coat each piece lightly with a little more breadcrumbs and place them on the tray. Brush the tops with the olive oil.
- 6
Bake for 20 to 25 minutes at 200 °C / 400 °F, turning halfway through, until the little lanterns are golden outside and hot inside.
- 7
Let them rest for 3 minutes before serving so the cheese can set slightly. Serve warm.
Chef tips
For a more playful look, gently press lines with the back of a knife before baking so they resemble little lanterns. If you want a softer texture for younger children, finely chop the corn before mixing.
Substitutions
You can swap the mozzarella for Oaxaca cheese or another mild melting cheese. Chives can be replaced with chopped parsley. For a gluten-free version, use gluten-free breadcrumbs.
