1. Preheat the oven to 200 °C / 400 °F. Lightly grease a baking tray or line it with parchment paper and brush it with a little of the olive oil.
- 2
2. In a large bowl, combine the ground turkey, ground oats, grated apple, shredded mozzarella cheese, beaten egg, grated zucchini, the remaining olive oil, onion powder, garlic powder, and salt.
- 3
3. Mix well with a spoon or clean hands until the mixture is even and soft. Let it rest for 5 minutes so the oats absorb some of the moisture.
- 4
4. Shape the mixture into 12 small drum-like oval bites of equal size and place them on the tray, leaving a little space between each one.
- 5
5. Bake for 18 to 20 minutes at 200 °C / 400 °F, until cooked through inside and lightly golden outside.
- 6
6. Remove the tray from the oven and let the bites rest for 3 minutes before serving so they set nicely.
- 7
7. Serve warm. If desired, pair with soft cooked vegetables or mild rice for a complete meal.
Chef tips
For a more tender texture, grate the apple and zucchini on the fine side of the grater. If the mixture feels too wet, add 1 extra tablespoon of ground oats.
Substitutions
You can use ground chicken instead of turkey. Mozzarella can be swapped for mild Monterey Jack or another soft melting cheese. The apple can be replaced with grated pear.
