Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Line a baking tray with parchment paper and lightly brush it with some of the olive oil.

  2. 2

    2. In a large bowl, combine the cooked white rice, cooked shredded chicken, lightly mashed cooked peas, shredded mozzarella, finely grated carrot, and finely chopped chives.

  3. 3

    3. Add the beaten egg, breadcrumbs, salt, and ground black pepper. Mix very well until you get a moist mixture that can be shaped with your hands.

  4. 4

    4. With clean hands, shape 12 mini treasures or slightly oval balls. If the mixture feels too sticky, dust your hands with a little extra breadcrumbs.

  5. 5

    5. Place the pieces on the prepared tray and brush or drizzle the tops with the remaining olive oil to help them turn lightly golden.

  6. 6

    6. Bake for 16 to 18 minutes at 200 °C / 400 °F, turning them carefully halfway through, until firm and lightly golden on the surface.

  7. 7

    7. Let them rest for 5 minutes before serving so they hold their shape better and cool slightly. Serve warm.

Chef tips

For a softer texture, chop the chicken even more finely before mixing. You can also make the pieces smaller for very little hands and reduce the baking time by 2 to 3 minutes.

Substitutions

You can replace the mozzarella with Monterey Jack or a mild shreddable fresh cheese. Chives can be replaced with finely chopped parsley. If you do not have peas, use the same amount of cooked sweet corn.
