Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray with 1 teaspoon of the olive oil.

  2. 2

Place the potato in a pot with enough water and cook for 12 to 15 minutes, until very soft. Drain well and mash with the milk until you get a thick puree.

  3. 3

While the potato cooks, heat the remaining teaspoon of olive oil in a skillet over medium heat. Add the onion and cook for 2 to 3 minutes until softened.

  4. 4

Add the ground turkey to the skillet along with the garlic powder, salt, and black pepper. Cook for 5 to 7 minutes, breaking it up well, until the turkey is fully cooked.

  5. 5

Stir the peas into the turkey and cook for 2 more minutes. Remove from the heat and let cool for 5 minutes.

  6. 6

In a large bowl, combine the mashed potato, turkey and peas mixture, shredded mozzarella, egg, and breadcrumbs. Mix until a moldable dough forms. If it feels too wet, add a little more breadcrumbs.

  7. 7

With clean hands, take small portions and shape them into little elongated cylinders. Gently mark three small sections with your fingers or the edge of a spoon to give them a train-like look.

  8. 8

Place the little trains on the prepared tray, leaving a little space between each one.

  9. 9

Bake for 12 to 15 minutes at 200 °C / 400 °F, until firm and lightly golden on the outside.

  10. 10

Let them rest for 5 minutes before serving so they hold their shape better.

Chef tips

For a softer texture, mash the potato very well and chop the onion finely. If you want a more playful presentation, use a clean skewer to mark little windows before baking.

Substitutions

You can replace the turkey with cooked ground chicken. Mozzarella can be swapped for another mild shredded cheese. For a gluten-free version, use gluten-free breadcrumbs.
