Instructions

  1. 1

    1. Preheat the oven to 190 °C / 375 °F. Lightly grease an 8-cup muffin pan with a little olive oil.

  2. 2

    2. In a large bowl, mix the cooked white rice, cooked shredded chicken, pumpkin puree, finely grated carrot, finely chopped chives, garlic powder, sweet paprika, salt, and ground black pepper.

  3. 3

    3. Add the lightly beaten egg, oat flour, shredded mozzarella cheese, and olive oil. Mix well until you have a moist, even mixture that can be spooned easily.

  4. 4

    4. Divide the mixture among the 8 muffin cups and gently press with a spoon to compact it slightly and shape the cups.

  5. 5

    5. Bake for 22 to 25 minutes at 190 °C / 375 °F, until the edges look lightly golden and the cheese is melted.

  6. 6

    6. Let the cups rest in the pan for 5 minutes so they can firm up. Then remove them carefully.

  7. 7

    7. Serve warm. If desired, pair them with extra pumpkin puree or soft vegetables on the side.

Chef tips

For a firmer texture, let the cups cool for 10 minutes before unmolding. You can use silicone molds for easier removal.

Substitutions

You can swap mozzarella for mild Oaxaca cheese or Monterey Jack. Chives can be omitted. If you do not have oat flour, blend rolled oats until fine.
