Instructions
- 1
Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it with some of the olive oil.
- 2
In a bowl, mix the shredded turkey, ricotta, sweet corn, grated carrot, garlic powder, dried oregano, and salt until the filling is evenly combined.
- 3
Place the flour tortillas on a clean surface and spread the filling over each one, leaving a 1 cm border so they can be rolled without the filling spilling out.
- 4
Roll each tortilla tightly to make two logs. Brush the final edge with a little of the beaten egg to help seal it.
- 5
Using a sharp knife, cut each roll into 5 or 6 even pieces to make the pinwheels.
- 6
Arrange the pinwheels on the tray with the cut side facing up. Brush the tops with the remaining beaten egg and the olive oil so they brown gently.
- 7
Bake for 16 to 18 minutes at 200 °C / 400 °F, until the pinwheels are hot inside and lightly golden outside.
- 8
Let them rest for 5 minutes before serving so the filling can set and the pinwheels are easier to hold.
Chef tips
For a softer texture for younger kids, chop the corn and turkey a bit more before mixing. If you want a firmer shape, chill the rolls for 10 minutes before slicing.
Substitutions
You can replace the ricotta with well-drained cottage cheese or mild cream cheese. Cooked turkey can be swapped for the same amount of shredded cooked chicken. For a sweeter flavor, use extra tender corn in place of part of the carrot.
