Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper.

  2. 2

Blend the rolled oats in a blender or food processor until you get a coarse flour. Transfer it to a large bowl.

  3. 3

Add the cooked shredded chicken, shredded mozzarella cheese, finely grated carrot, egg, plain yogurt, olive oil, garlic powder, sweet paprika, salt, and chopped parsley to the bowl.

  4. 4

Mix very well with a spoon or clean hands until a moist, moldable dough forms. Let it rest for 5 minutes so the oats can absorb some of the moisture.

  5. 5

Place the mixture between two sheets of parchment paper and roll it out into a rectangle about 1 cm thick.

  6. 6

Remove the top sheet and, using the bottom paper to help, roll the rectangle into a compact log.

  7. 7

Cut the log into 12 thick slices and arrange them on the tray, leaving a little space between each one.

  8. 8

Bake for 16 to 18 minutes at 200 °C / 400 °F, until the pinwheels are set and lightly golden around the edges.

  9. 9

Let them cool for 5 minutes before serving so they hold their shape better and are comfortable for children to eat.

Chef tips

For an even softer texture, chop the chicken a bit more finely before mixing. You can also use small round cutters to give them a more uniform shape.

Substitutions

You can replace the mozzarella with any mild shredded cheese that melts well. Plain yogurt can be swapped for the same amount of thick sour cream. Parsley can be replaced with very finely chopped chives.
