Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it with some of the olive oil.

  2. 2

In a medium bowl, mix the shredded turkey, mozzarella, grated carrot, grated zucchini, cream cheese, plain yogurt, chives, garlic powder, sweet paprika, salt, and black pepper until the filling is evenly combined.

  3. 3

Place the tortillas on a clean surface. Spread the filling over each tortilla, leaving a 1 cm / 1/2 in border around the edges.

  4. 4

Lightly brush the edges of each tortilla with the beaten egg. Roll each tortilla up tightly to form firm logs.

  5. 5

Cut each roll into 5 or 6 even pieces to make pinwheels. Place them cut side up on the prepared tray and brush the tops with the remaining beaten egg and the olive oil.

  6. 6

Bake for 12 to 15 minutes at 200 °C / 400 °F, until the pinwheels are golden around the edges and the cheese is melted.

  7. 7

Let them rest for 3 minutes before serving so the filling can settle and the pinwheels hold their shape.

Chef tips

For a fun presentation, serve the pinwheels with decorative picks or pair them with cucumber sticks. If the zucchini is very watery, squeeze it well so the tortillas do not become soggy.

Substitutions

You can swap the turkey for cooked shredded chicken. Mozzarella can be replaced with any mild shredded cheese. Chives can be replaced with chopped parsley.
