Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper brushed with a little olive oil.

  2. 2

In a large bowl, combine the ground turkey, cooked quinoa, finely grated carrot, finely grated zucchini, grated mild cheddar cheese, egg, breadcrumbs, olive oil, onion powder, garlic powder, sweet paprika, and salt.

  3. 3

Mix well with a spoon or clean hands until you get an even, slightly sticky mixture. If it feels too wet, let it rest for 2 minutes so the breadcrumbs can absorb some moisture.

  4. 4

Shape 16 small bites, round or oval, using about 1 tablespoon of mixture for each one, and place them on the tray with a little space between them.

  5. 5

Bake for 16 to 18 minutes at 200 °C / 400 °F, rotating the tray halfway through, until the bites are firm, golden on the bottom, and fully cooked inside.

  6. 6

Let them rest for 3 minutes before serving so they can set and cool slightly. Serve warm.

Chef tips

For a softer texture for younger children, grate the vegetables very finely and do not over-pack the mixture when shaping the bites.

Substitutions

You can swap the cheddar for mild mozzarella. Cooked quinoa can be replaced with the same amount of cooked rice. If you want a different vegetable, use well-drained grated pumpkin instead of zucchini.
