Instructions
- 1
Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper.
- 2
Place the potato in a pot with water and cook for 12 to 15 minutes, until very soft. Drain well and mash while still warm.
- 3
Add the chopped spinach, 60 g (2 oz) of the shredded mozzarella cheese, the beaten egg, breadcrumbs, olive oil, onion powder, garlic powder, and salt to the mashed potato. Mix until you get a soft but shapeable mixture. If it feels too wet, add a little more breadcrumbs.
- 4
Take small portions of the mixture and shape them into little ovals or simple fun shapes with your hands. Place them on the prepared tray.
- 5
Sprinkle the remaining 20 g (1 oz) of shredded mozzarella cheese on top so the bites turn golden and tasty.
- 6
Bake for 18 to 20 minutes at 200 °C / 400 °F, turning them carefully halfway through, until golden on the outside.
- 7
Let them rest for 5 minutes before serving so they hold their shape better. Serve warm.
Chef tips
For a firmer texture, chill the mixture for 10 minutes before shaping. You can use small cutters only if the mixture is well compacted.
Substitutions
You can swap the mozzarella for mild cheddar or shredded Oaxaca cheese. The spinach can be replaced with very finely chopped Swiss chard, lightly sautéed first.
