Instructions

  1. 1

    1. Preheat the oven to 190 °C / 375 °F. Lightly grease a 12-cup mini muffin pan with a little vegetable oil.

  2. 2

    2. In a medium bowl, mix the all-purpose flour, baking powder, salt, and ground black pepper.

  3. 3

    3. In another bowl, whisk the egg with the milk and the 2 tablespoons of vegetable oil until smooth.

  4. 4

    4. Add the cooked shredded chicken, sweet corn kernels, finely grated carrot, and shredded cheddar cheese to the wet mixture. Stir well to distribute evenly.

  5. 5

    5. Add the dry ingredients to the bowl with the wet ingredients and mix gently just until no dry flour remains. Do not overmix.

  6. 6

    6. Divide the batter into the mini muffin pan, filling each cup almost to the top evenly.

  7. 7

    7. Bake for 18 to 20 minutes at 190 °C / 375 °F, or until the mini muffins are set, lightly golden, and a toothpick inserted in the center comes out clean.

  8. 8

    8. Let them rest in the pan for 5 minutes. Then unmold and serve warm.

Chef tips

For a softer texture, lightly chop the corn before mixing it in. You can also use silicone molds for easier unmolding.

Substitutions

You can swap the cheddar for mild mozzarella or shredded Oaxaca-style cheese. The carrot can be replaced with well-drained grated zucchini.
