Instructions
- 1
Preheat the oven to 200 °C / 400 °F and lightly grease a muffin pan or 4 large molds with a little olive oil.
- 2
Cook the potato in water until very tender, about 10 minutes. Drain well and mash it in a large bowl until you have a thick mash.
- 3
Add the shredded cooked chicken, grated and squeezed zucchini, half of the mozzarella cheese, the beaten egg, ground oats, garlic powder, onion powder, salt, black pepper, and olive oil to the bowl. Mix until combined.
- 4
Divide the mixture among the molds and, using a spoon, press the center of each portion to shape a little nest.
- 5
Sprinkle the remaining mozzarella cheese on top and bake for 25 minutes at 200 °C / 400 °F, or until the edges are golden and set.
- 6
Let rest for 5 minutes out of the oven. Unmold carefully and serve each nest with a spoonful of plain yogurt and a little grated carrot on top.
Chef tips
Squeeze the zucchini well so the nests hold their shape. If the mixture feels too wet, add 1 extra tablespoon of ground oats.
Substitutions
You can use cooked turkey instead of chicken. Plain yogurt can be replaced with mild sour cream, and mozzarella can be swapped for another mild melting cheese.
