Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F. Lightly grease an 8-cup muffin tin with some of the olive oil.

  2. 2

In a large bowl, mix the ground chicken, cooked white rice, finely grated carrot, shredded mozzarella cheese, egg, breadcrumbs, finely chopped chives, garlic powder, salt, ground black pepper, and half of the olive oil.

  3. 3

Stir very well with a spoon or clean hands until the mixture is evenly combined and easy to shape.

  4. 4

Divide the mixture into 8 equal portions. Place each portion into a muffin cup and press with your fingers or the back of a small spoon to create a little hollow in the center, like a nest.

  5. 5

Brush or drizzle the tops of the nests with the remaining olive oil to help them brown.

  6. 6

Bake for 20 to 22 minutes at 200 °C / 400 °F, or until the nests are golden and the chicken is fully cooked in the center.

  7. 7

While they bake, mix the plain yogurt with the thick tomato puree to make a mild pink dipping sauce.

  8. 8

Let the nests rest for 3 minutes out of the oven before carefully unmolding them. Serve warm with the yogurt and tomato sauce on the side.

Chef tips

If the mixture feels too wet because of the carrot or chicken, add 1 to 2 extra tablespoons of breadcrumbs. For a fun presentation, serve each nest with cooked peas or a few corn kernels in the center right before serving.

Substitutions

You can replace the chicken with the same amount of ground turkey. Mozzarella can be swapped for another mild shredded cheese. The chives may be omitted for a simpler flavor.
