Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and lightly grease a 12-cup muffin pan with a little olive oil.

  2. 2

Cook the pasta in water until al dente, drain well, and let it cool for 5 minutes so it does not cook the eggs when mixed in.

  3. 3

Grate the zucchini and squeeze it with your hands or a clean towel to remove excess moisture. Finely grate the carrot as well.

  4. 4

In a large bowl, beat the eggs with the olive oil, garlic powder, dried oregano, and salt.

  5. 5

Add the cooked pasta, grated zucchini, grated carrot, and shredded mozzarella cheese to the bowl. Mix well until everything is evenly combined.

  6. 6

Divide the mixture among the 12 muffin cups, gently pressing with a spoon to shape compact little nests.

  7. 7

Bake at 200 °C / 400 °F for 18 to 20 minutes, until the edges are golden and the center looks set.

  8. 8

Let the nests rest for 5 minutes out of the oven before unmolding. Serve warm for a softer texture.

Chef tips

If you want a more defined shape, let them cool for a full 10 minutes before unmolding. For younger children, you can cut each nest into halves.

Substitutions

You can use a mild shredded cheese such as Monterey Jack or a good melting fresh cheese instead of mozzarella. The zucchini can be replaced with the same amount of grated, well-squeezed pumpkin or squash.
