Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Line a baking tray with parchment paper or lightly grease it with some of the olive oil.

  2. 2

    2. In a large bowl, combine the ground chicken, cooked white rice, finely grated carrot, shredded mozzarella cheese, egg, breadcrumbs, finely chopped chives, garlic powder, salt, and ground black pepper.

  3. 3

    3. Mix with a spoon or clean hands until you have an even mixture. If it feels too wet, add a little more breadcrumbs, 1 tablespoon at a time.

  4. 4

    4. Shape the mixture into small balls or mounds about 1.5 to 2 inches wide and place them on the tray. You should get about 16 cloud bites.

  5. 5

    5. Brush or lightly drizzle the cloud bites with the olive oil so they brown evenly.

  6. 6

    6. Bake for 16 to 18 minutes at 200 °C / 400 °F, or until the chicken is fully cooked and the bites are firm and lightly golden around the edges.

  7. 7

    7. Let them rest for 5 minutes before serving so they hold their shape better and cool to a kid-friendly temperature.

Chef tips

For a softer texture, lightly mash the cooked rice with a fork before mixing. You can serve them with thick plain yogurt or a mild tomato dipping sauce.

Substitutions

You can swap the mozzarella for Monterey Jack or a mild shreddable fresh cheese. Chives can be replaced with chopped parsley. If preferred, use cooked brown rice instead of white rice, though the texture will be slightly firmer.
