Instructions

1. Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly brush it with some of the olive oil.
- 2
2. Place the potato in a pot with enough water and cook for 12 to 15 minutes, until very tender. Drain well and mash the potato into a thick puree with no large lumps.
- 3
3. While the potato cooks, cook the salmon fillet. You can bake it at 200 °C / 400 °F for 10 to 12 minutes or steam it until fully cooked. Let it cool slightly, then flake it and check carefully for bones.
- 4
4. Cook the peas in boiling water for 2 to 3 minutes. Drain them and lightly mash with a fork so they blend better into the mixture.
- 5
5. In a large bowl, combine the mashed potato, flaked salmon, peas, shredded cheddar cheese, egg, breadcrumbs, garlic powder, salt, and black pepper. Mix until you have a soft, workable dough. If it feels too wet, add a little more breadcrumbs.
- 6
6. Divide the mixture into 8 portions and shape small cloud-like patties with your hands. Place them on the tray and brush the tops with the remaining olive oil.
- 7
7. Bake at 200 °C / 400 °F for 16 to 18 minutes, carefully turning halfway through, until the little clouds are set and lightly golden on both sides.
- 8
8. Let them rest for 5 minutes before serving so they firm up slightly. Serve warm.
Chef tips
For a softer texture for younger children, mash the peas well and finely flake the salmon. You can also make smaller pieces for little hands.
Substitutions
You can use mild mozzarella instead of cheddar. Salmon can be replaced with cooked trout. For a gluten-free version, use gluten-free breadcrumbs.
